Eggs and Sausage Main Dish from 1979

Happy December Eve. We almost made it to 2024. Go us!

Today’s post is a quick recipe from The Fabulous Egg Cookbook, written in 1979 by Jeffrey Feinman. I’m always looking for tasty ways to eat more eggs and this fits the bill! It’s also pretty hands-off, so if you are coordinated enough you can start it at the beginning of your morning routine and then eat it on your way out the door. Or possibly as you work if you work from home, which is definitely not what I am doing in the only picture I have of the food below….

The recipe is gluten-free, keto, paleo, and low carb, provided the ingredients you use fit those criteria. Most of the time these ingredients are, but when in doubt, check the label. And if you’re not the one with an allergy/diet and you’re not sure, ask the person you’re feeding it to.

I have altered the recipe slightly to make it easier. (For example, in the original recipe you fry the sausage first and then bake the dish, but that seems like a lot of work and extra dishes for not a lot of change in flavor/texture.) Unfortunately, I’m not on a wordpress plan that allows plugins, but if I someday am, I will come back and set this up as an easily printable recipe card.

Without further ado, here is the recipe.

Eggs and Sausage Main Dish from 1979

Ingredients

  • 4 frozen sausage links
  • 2 eggs
  • Salt and pepper

Directions

Preheat oven to 350°F. Spray a ramekin with cooking spray. Place the sausages in the ramekin in a square shape and microwave for 1 minute. Then crack the eggs into the square and top with salt and pepper. Bake for 15-20 minutes or until eggs are cooked to your preferred level of done.

Notes

  • I have topped this with thinly sliced tomatoes and Tajín before baking and that is quite tasty. It would also be great with cheese or whatever else it is you typically put on eggs.
  • Different brands of sausage are different and so are ramekin sizes. You’ll probably need to experiment with what you have to find the perfect pairing. That said, it’s ok if the sausage is smushed in there and is not a perfect square.
